This study explores a novel approach to food development by leveraging AI, including generative AI, to create products that appeal to consumers' emotions and senses. The researchers focused on developing "Romance Bread," a collection of breads infused with flavors reflecting the nuances of a romantic Japanese television program.
The key steps in the development process were:
Conversation Analysis: Using NEC's speech analysis technology, the researchers extracted and categorized 15 hours of conversation data from the TV program into five romance-themed scenes ("First Encounter," "Date," "Jealousy," "Broken Heart," and "Mutual Love"). They then calculated emotion vectors for each scene.
Lyric Analysis: The researchers extracted and analyzed lyrics from approximately 35,000 Japanese songs to create emotion vectors for 183 food ingredients, including fruits and sweets.
Ingredient Recommendation: By comparing the emotion vectors of the romance scenes and the ingredients, the researchers recommended the top 50 ingredients that best matched the emotional distribution for each scene.
Bread Development: The bread developers at Kimuraya Sohonten Co. selected compatible ingredient combinations from the AI-recommended list to create five types of "Romance Bread," each reflecting a different romance-themed scene.
Product Description Generation: Using NEC's large language model, the researchers generated product descriptions for the breads, which were then manually refined.
The study included a tasting evaluation with 31 participants, which showed a notable correlation between the AI-generated taste indicators and human preferences, particularly for the "Jealousy" flavor. Interviews with the product developers revealed that the AI collaboration fostered innovative flavor combinations and challenged them to express emotions through the bread's appearance.
The findings suggest that the integration of AI and human expertise in food development can lead to the creation of unique consumer experiences that focus on emotional engagement. The researchers envision that future advancements in generative AI technologies, such as image generation, could further enhance the collaborative process and accelerate innovation in the food industry.
